VEGAN SCONEZY-MUFFS

Banana, coconut and date treats!


2 1/2 cups of organic spelt self raising flour

60g Macadamia Nut Oil

2 tbsp of Honey

1/2 cup of Shredded coconut

1 cup banana mashed

3 large pitted medjool dates soaked for 10mins

3/4 cup of coconut milk

1 tbsp of cinnamon



Preheat oven to 180 degrees and line a baking tray with baking paper. Measure flour and oil into a large mixing bowl and mix together with your fingers, pressing the oil into the flour. Add coconut, honey and cinnamon and mix well. In a separate bowl, fold together banana, dates and milk and when just combined, add to flour mixture and mix together.


Using two dessert spoons, make balls of mixture roughly 4cms in diameter and place on baking tray. You should make around 12-14 scones.


Bake for 12 mins until risen and golden brown. Remove from the oven and allow to cool on a cooling rack.



To turn into pumpkin and pepita, replace banana with mashed pumkin (cooled), coconut with pepitas, loose the dates cinnamon and add a handful of chopped fresh basil and a teaspoon of sweet paprika.


These are so tasty! And with No DAIRY, BUTTER or REFINED SUGARS... they are guilt-free too! I made a fresh spinach macadamia and basil pesto to put on the pumpkin ones and eat straight from the oven. SO GOOD
